High-Fiber Orange-Bran Muffins
Ingredients
- Butter
- 1 cup whole wheat flour
- 1/2 cup all purpose flour
- 1/2 cup sugar
- 1/2 tsp. salt
- 1 tbsp. baking powder
- 1/4 tsp baking soda
- 2 cup All Bran cereal
- 3/4 cup skim milk
- 1/4 cup orange honey (regular honey can be substituted)
- 2 eggs
- 1/4 cup Canola oil
- 1/2 - 3/4 cup raisins (optional)
- 1 tsp orange zest
- Preheat oven to 400 degrees
- Stir together wheat flour, all purpose flour, baking soda, and baking powder. Set the dry mixture aside.
- In a separate bowl stir in cereal, milk, and orange juice. Allow to sit for about 3 minutes. Add orange honey, eggs, raisins and orange zest. Mix well.
- Stir in the dry ingredients to the wet mixture until well combined. Pour batter unto 12 paper lined muffin tins with 2 1/2 inch diameter cups.
- Bake for 20 minutes or until golden brown.
