High-Fiber Orange-Bran Muffins

Ingredients

  • Butter
  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 1 tbsp. baking powder
  • 1/4 tsp baking soda
  • 2 cup All Bran cereal
  • 3/4 cup skim milk
  • 1/4 cup orange honey (regular honey can be substituted)
  • 2 eggs
  • 1/4 cup Canola oil
  • 1/2 - 3/4 cup raisins (optional)
  • 1 tsp orange zest
  1. Preheat oven to 400 degrees
  2. Stir together wheat flour, all purpose flour, baking soda, and baking powder. Set the dry mixture aside.
  3. In a separate bowl stir in cereal, milk, and orange juice. Allow to sit for about 3 minutes. Add orange honey, eggs, raisins and orange zest. Mix well.
  4. Stir in the dry ingredients to the wet mixture until well combined. Pour batter unto 12 paper lined muffin tins with 2 1/2 inch diameter cups.
  5. Bake for 20 minutes or until golden brown.
